Avocado & Smoked Salmon Toast

 Ingredients:

  • 1 Avocado
  • 2 tbsp 0% natural yoghurt
  • Half a lemon, squeezed
  • 2 slices of rye bread
  • Pinch of cayenne pepper
  • 75g of smoked salmon
  • Quarter cucumber, cut into ribbons
  • Salad cress (optional)

  • For the dressing:
  • Half red chilli chopped & deseeded
  • 1 tsp fresh mint chopped
  • Half lemon juiced
  • 1 tomato finely diced
  • 1 tsp white wine vinegar

Method:

  1. Make the dressing by mixing all the ingredients together with some seasoning.
  2. Halve the avocado, remove the stone and scoop the flesh into a bowl. Add the yoghurt and lemon juice and mash everything with a fork. Season well with salt and black pepper.
  3. Divide the avocado between the toasted rye bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the cress.
