Warm and comforting and ideal for when you want something savoury and delicious. Great as a low-calorie snack, or double up the serving for a lunch or dinner option. 


  • 100g raw wakame (seaweed)
  • 1.4L vegetable broth
  • 250g soft tofu, drained and cubed
  • 30g miso paste
  • 30g spring onions, chopped


  1. To prepare the wakame, cover in a bowl (approximately 1 inch) with warm water and leave to stand for 15 minutes or until reconstituted. Drain through a sieve. 
  2. To a saucepan add 500ml vegetable stock and the miso paste and stir over a medium heat until smooth. 
  3. Add the remaining stock and heat over a high heat until hot. Gently stir in the tofu and the prepared wakame. Simmer for 1 minute and remove from the heat. Stir in the spring onions and serve hot.
