Courgetti With Tomato, Parma Ham & Basil

By using courgetti instead of pasta, this delicious meal is high in fibre and extra nutrients. The basic tomato sauce is great to have on hand to create your own recipes.


  • 4 slices Parma ham
  • 1/2 pack fresh basil
  • 1 garlic clove
  • 350g tomato passata
  • 50g cherry tomatoes, halved
  • 250g pack courgetti 


  1. Tear the Parma ham and basil.
  2. Heat a non-stick frying pan over a medium heat heat the Parma ham until crispy. Set aside.
  3. Add the garlic to the frying pan and cook for 2 minutes until fragrant.
  4. Add the passata to the pan, season generously with salt and pepper and cook through for a few minutes. 
  5. Add the courgetti to the sauce and cook through for 2 minutes until warmed through. Be careful not to overcook the courgetti. 
  6. Divide between 2 bowls and top with the cooked Parma ham, cherry tomatoes and torn basil.
