Roasted Chickpea Wraps

High in protein, chickpeas make a delicious vegetarian option. The perfect family recipe to enjoy together. 


  • 2 400g cans of chickpeas, drained
  • 2 tsp olive oil
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 2 avocados, chopped
  • 1 lime, juiced
  • 1 handful fresh coriander, chopped
  • 8 wholewheat tortilla wraps
  • 1 small iceberg lettuce, shredded
  • 150g fat free Greek yogurt
  • 480g jar roasted red peppers, chopped


  1. Preheat the oven to 200'C. 
  2. To a large bowl add the chickpeas, olive oil, cumin and paprika and mix well to coat the chickpeas. 
  3. Spread the coated chickpeas to a large baking sheet and roast for 20-25 minutes until starting to crisp, giving the tray a shake midway through to ensure they roast evenly.
  4. Remove from the oven and season with salt and pepper to taste. 
  5. To a medium bowl toss the avocado with the lime juice and chopped coriander and set aside until ready to serve.
  6. Lay the tortilla wraps on a flat surface and evenly distribute the avocado, lettuce, peppers and toasted chickpeas. Top with yogurt and fold over.
