Kale and Roasted Cauliflower Salad

This salad combines a delicious array of textures and flavours perfect as a simple lunch or great topped with your favourite protein source.

Ingredients: 

For the cauliflower:

  • 450g cauliflower florets
  • 2 tbsp olive oil

For the salad

  • 100ml lemon juice
  • 3 tbsp olive oil
  • 200g kale, ribs removed and chopped
  • 1/4 small red onion, thinly sliced
  • 40g feta cheese, crumbled
  • 40g golden raisins
  • 40g pine nuts, toasted

Method: 

  1. Preheat the oven to 230'C. 
  2. On a large baking sheet, toss the cauliflower with 2 tablespoons of olive oil and season well with salt and pepper. 
  3. Roast in the oven for 25 minutes or until the stems are tender. 
  4. In a large bowl, whisk lemon juice, 3 tablespoons of olive oil and half a teaspoon of salt. 
  5. Toss the kale in the dressing and leave to stand for 5 minutes. 
  6. To the kale add the cooked cauliflower, onion, crumbled feta, golden raisins and toasted pine nuts. 
  7. Toss until well combined and serve.
