Chia pudding is a filling breakfast that you can enjoy on the go. Mix 250ml almond milk with 2 tbsp coconut yoghurt and 4 tbsp chia seeds – add 1 tsp honey or maple syrup, or 1 vanilla pod to sweeten it up. Pop the pudding in the fridge overnight, then top with your favourite berries in the morning for an extra antioxidant boost.
Your morning smoothie just got super thanks to these tiny seeds. Blend spinach, banana, almond milk and chia seeds – add mango to taste. This smoothie is best enjoyed fresh, so make it just before you head out of the door.
This recipe is the ideal time-saver if you have a hectic week ahead. Make a big batch of chia seed breakfast bars on the weekend and simply grab and go each morning. Mix 120g jumbo rolled oats with 60g each of chopped almonds, walnuts and pecans – roast at 180°C for ten minutes. Add 60g dried fruit, 5 tbsp maple syrup and 2 tbsp chia seeds. Level out in a baking tin and chill.
Chia granola is a failsafe recipe that you can tailor to your taste buds. Combine oats, a handful of your favourite nuts and chia seeds with hearty flavours from maple syrup, vanilla or cinnamon. Bake for 15 minutes – tossing occasionally – or until golden brown. Eat with your nut milk of choice, fresh fruit, or just as it is.
Overnight oats are easy to prepare. Simply soak 30g rolled oats in 80ml coconut milk, 6 tbsp Greek yoghurt and top with ½ banana and 1 tbsp chia seeds for an extra boost of fibre and protein. Refrigerate overnight and serve topped with crunchy almond butter.
