Mix 250ml almond milk with 2 tbsp coconut yoghurt and 4 tbsp chia seeds – add 1 tsp honey or maple syrup, or 1 vanilla pod to sweeten it up. Pop the pudding in the fridge overnight, then top with your favourite berries in the morning for an extra antioxidant boost.

Mix 120g jumbo rolled oats with 60g each of chopped almonds, walnuts and pecans – roast at 180°C for ten minutes. Add 60g dried fruit, 5 tbsp maple syrup and 2 tbsp chia seeds.
